Our Direct Trade relationship with the Alvarez family has produced this extraordinary decaf, from their two farms: El Borbollon and Finca Malacara. Each of these farms demonstrates a remarkable commitment to sustainable environmental and social practices, providing exemplary living conditions, health care, and fair wages for the skilled people who work the land alongside them, as well as on-site education and day-care for the children. This coffee takes its name from the El Borbollon mill, where the coffee is processed. We sent this lot to Mexico to be decaffeinated by the Water Process, a method that preserves the inherent quality and flavor characteristics of the coffee while removing the caffeine.
Farmers in El Salvador tend to leave the coffee on the tree until it reaches a deep burgundy color contributes to the rich sugars, mid-range notes and round body characteristic of coffees from this country. Additionally, this coffee is pure bourbon, the original varietal brought to Martinique in 1720s by a French sailor. It is still reputed for its complex fruit character and developed sweetness. While most other countries in the Americas have replanted with higher yielding cultivars, El Salvador’s production remains primarily bourbon. The intense sweetness, elegance, and balanced fruit acidity is preserved by the gentle water decaffeination process for you to enjoy in the cup!
